Pineapple-Nut Coffee Cake

2 c. all-purpose flour
1-1/2 c. sugar
1 t. baking soda
1/2 t. salt
1 egg, beaten
2 c. crushed pineapple, drained
1/2 c. brown sugar, packed
1/2 c. chopped walnuts
Â
Ina large bowl, combine flour, sugar, baking soda, salt, egg and
pineapple.Mix well; pour batter into a greased and floured 13″x 9″ baking
pan.In a separate bowl, mix brown sugar and nuts; sprinkle over batter.
Bake at 325 degrees for 30 minutes. Meanwhile, prepare Topping about
10 minutes before cake is done. Spoon hot topping over hot cake as
soon as it is removed from oven. Makes 12 servings.

Topping:
1 c. evaporated milk
1/2 c. butter, sliced
3/4 c. sugar
1/2 t. vanilla extract

Mix together evaporated milk, butter and sugar in a saucepan. Boil over
medium-low heat for 2 minutes. Stir in vanilla
